‘We will go through popular dishes from the wedding menu and hopefully there will be tips that people can go home and try out themselves. Attendees will also be privy to the recipe for the gorgeous Walnut and Guinness bread served daily in the Hotel Bistro,’ said Ultan. A Galway native and graduate of GMIT, having spent ten years in London mastering his craft alongside MasterChef TV personality John Torode working in his restaurants ‘Smiths of Smithfield’ and ‘The Luxe’, he returned to work in Galway’s Michelin star restaurant Aniar and then moved to Ballynahinch Castle in Clifden. In late 2016 Ultan joined The Ardilaun team as Executive Head Chef. Delighted now to be settling back to Galway where he was reared, with his wife and son Max age 5.
Grounded in an ethos of ‘using the best of what we have locally’, the focus of Ultan’s work is to source seasonal, local produce and create dishes accordingly. Where possible he chooses to source local artisan ingredients which makes dining at The Ardilaun a truly West of Ireland experience with a taste of The Wild Atlantic Way.
Following the food demonstration, you can visit the elegant Garden Lounge set up for a civil ceremony, with its original Waterford Crystal chandeliers insitu for the 55 years since the hotel first opened set up for a civil ceremony.
